A fermentation run cooks a mash recipe into a wash in a fermenter. The wash has no proof gallons. Gravity readings stay gravity. Alcohol quantity begins at the still.
Start: left nav Fermentation → Record Fermentation Run, or the production toolbar Fermentation Run (toolbar shows mash/still/fill/dump when barrels is on; otherwise start from the Fermentation page).
How to record
- Mash recipe (required) — fills the bill.
- Run date, Fermenter, Wash name, Cook size (gallons), Actual gallons produced, original gravity, Operator.
- The Bill — Add Material (Water / Fermentable / Miscellaneous), pick lots. Unassigned lines are allowed; assign them on the wash before you charge the still.
- Cook & Mash Rest Steps: Start / End as you work.
- QA fields show recipe targets.
- Record Fermentation Run.
Toast: "Fermentation run recorded — {name} is in the fermenter." Status: Fermenting, then Depleted when charged away. Production day locks.
Readings
On the wash: Fermenter, Original Gravity, Final Gravity, Alcohol By Volume, Attenuation (derived; may show In progress). Fermentation Readings: Log Date, Temperature, Gravity, Notes → Add Reading.
Move Wash / undo
Move Wash: Move date, gallons remaining in the tank after the move, Destination fermenter, Resulting wash name. Also Adjust Volume, Destroy Wash (gallons only — "not yet spirits, so nothing reports to TTB"). ⋮ Delete run returns materials to stock. There is no button named Undo.
Pro Tip: Assign unassigned materials on the wash before charging the still. The wash page says so.
